Sweet potatoes are often eaten baked or roasted but, this sweeter dish is very popular

To make this sweet potato dish you will need:

500g sweet potato, peeled and cubed                  2 Tablespoons butter or margarine

2 Tablespoons syrup                                              1 Tablespoon brown sugar

1 level teaspoon bicarbonate of soda

What to do:

  1. Put the sweet potato into a pot and cover with water. Bring to the boil, then simmer until tender.  Drain well.
  2. In the pot, melt the butter, syrup and brown sugar together then SLOWLY add the bicarb. Once a thick syrup has formed, remove from the heat and gently stir in the sweet potato.
