Sweet potatoes are often eaten baked or roasted but, this sweeter dish is very popular
To make this sweet potato dish you will need:
500g sweet potato, peeled and cubed 2 Tablespoons butter or margarine
2 Tablespoons syrup 1 Tablespoon brown sugar
1 level teaspoon bicarbonate of soda
What to do:
- Put the sweet potato into a pot and cover with water. Bring to the boil, then simmer until tender. Drain well.
- In the pot, melt the butter, syrup and brown sugar together then SLOWLY add the bicarb. Once a thick syrup has formed, remove from the heat and gently stir in the sweet potato.
