This is a tasty, traditional sausage enjoyed by South Africans. It can be served in a number of ways but, is popular cooked slowly over a fire or on a barbeque.
To make boerewors, you will need:
1,5kg beef, cut into cubes 1,5kg pork, cut into cubes
500g pork fat, cut into 5mm cubes 25ml salt
5ml pepper 50ml coriander
2ml grated nutmeg 125ml vinegar
1ml ground cloves 2ml ground dried thyme
2ml ground allspice 1 clove garlic, crushed
50ml Worcester sauce 85g sausage casing
What to do:
- Roast the coriander until light brown then grind and mix it with all the other spices, salt and pepper.
- Mince the meat coarsely and mix very lightly with all the other ingredients.
- Fill the casings with the meat mixture (not too firmly)
DO NOT KNEAD THE MEAT OTHERWISE THE SAUSAGE WILL BE TOO FIRM.
